Breakfast for Dinner

smoked salmon, breakfast, heart healthy, salmon, dinner, healthy recipes I don’t think it’s explicitly been said, but bagels are lox (aka smoked salmon) have become a breakfast tradition for my family.  Any major holiday, get together or vacation, bagels and lox make an appearance on the menu.  My sister is generally charged with finding semi-good bagels or my Mom brings a stash from NJ that’s she had in the freezer.  And my brother always brings the lox.  Capers, red onions, tomatoes and cream cheese always make the trip too – as they are essential bagel and lox accompaniments.

A lightly toasted bagel (preferably a bialy) smeared with a thick layer of cream cheese, dotted with salty capers, sliced red onion, tomatoes and draped with smoked salmon…oh my…the BEST breakfast on the planet.  It’s got all the flavors and textures – creamy cheese, sweet tomatoes, salty capers, crunchy bagel and smoky salmon.  Can you get any better at 8 am in the morning?  I think not!

Ever since Easter, which was the last family get together and thus the last time I had this magnificent breakfast, bagels and lox have been on my mind constantly.  I just couldn’t get this dish out of my head!  So this week when I was at the grocery store, I saw the lox in the seafood case.  So beautifully pink and sliced ever so thinly.  I couldn’t resist it!  We were having breakfast for dinner and bagels and lox is the dish of choice!

I’m not too picky about the ingredients for this.  I mean, they obviously have to be good quality – especially the bagel and lox part.  I do make my own cream cheese spread, but only because I think plain cream cheese is a little boring (see the 3rd picture above).  Really I’m just kinda specific about the method of assembly.  I press the capers into the cream cheese, followed by the red onion and tomato.  The cream cheese kinda acts like glue and holds all those pieces together.  That way, when you take a giant bite into this sandwich, the toppings all stay put!
SmokedSalmon3 Here’s my list of ingredients for the perfect sandwich, plus a few pointers on proper bagel and lox assembly!

Open Faced Smoked Salmon Sandwich:


  • 4 pieces whole grain bread or 2 bagels sliced in half
  • 6-8 oz thinly sliced smoked salmon (add more or less depending on how much you like)
  • 2 tbsp capers, drained
  • 1/4 cup thinly sliced red onion
  • 1/2 cup thinly sliced tomatoes
  • freshly cracked pepper
  • Lemon Herb Cream Cheese:
  • 1/2 cup goat cream cheese (or regular) at room temperature
  • 1 tbsp lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp finely chopped chives
  • 1 tbsp finely chopped parsley
  • 1/4 tsp salt


  1. Toast bread or bagels to your desired doneness.
  2. While bread is toasting, in a small bowl add all the ingredients for the lemon herb cream cheese.  Mix together well.
  3. Allow bread or bagels to cool slightly.  This helps prevent the cream cheese from melting and the sandwich from sliding around.
  4. Spread the cream cheese mixture evenly over the four pieces of bread/bagels.
  5. Divide the capers evenly among the 4 sandwiches making sure to press the capers down into the cream cheese.
  6. Add a layer of red onion followed by the sliced tomatoes.
  7. Lastly, drape entire sandwich with a few pieces of the smoked salmon (lox).  Sprinkle liberally with freshly cracked pepper.

    I love doing breakfast for dinner, although for me, it’s usually much less healthy things, like pancakes and waffles. 🙂

      I would totally do pancakes or waffles, but my husband doesn’t like them?! Can you believe that? Who doesn’t like pancakes….
