Crunchy Parmesan Crusted Asparagus

So… I’ve totally been MIA lately.  But I just couldn’t bear the thought of turning on my oven, stove or any cooking appliance in my kitchen.  The thought of turning the oven on made me crazy!  Was it lack of cooking inspiration?  No motivation?  Laziness?  No…it was lack of AIR CONDITIONING FOR THE LAST 11 DAYS!  High 90’s in our high rise building and we’ve had no AC.  Our living room was 92 degrees.  So the oven (and all other cooking) was out!

asparagus recipes, vegetarian recipes, asparagus fries, crunchy asparagus, crispy, healthy recipes Even though we are still without AC, thanks to an overwhelming amount of incompetence, we bought a portable AC unit for our bedroom which makes life a lot more bearable.  In addition, we’ve been blessed by cooler days so now the kitchen/living room is only 80 degrees.  Wonderful, huh? With the luck of a mild balmy kitchen weather, I went with a recipe that required the most minimal amount of cooking time.

asparagus recipes, vegetarian recipes, asparagus fries, crunchy asparagus, crispy, healthy recipes These Crunchy Parmesan Crusted Asparagus, are perfect for hot summer days when you don’t want to heat up the kitchen.  It literally takes about 5-7 minutes under the broiler and that’s it.  Even in our hot kitchen, it was worth the oven usage!  Super crunchy, a bit salty and perfectly simple, I’ll be making these again and again!

Ingredients:

  • 1 lb asparagus spears – trimmed of woody stems
  • 1 cup whole wheat panko bread crumbs
  • 1/3 cup freshly grated parmesan cheese
  • 1/2 tsp ground pepper
  • 1 egg, beaten

Instructions:

  1. Preheat the broiler.  Line a cookie sheet with a silpat or aluminum foil with cooking spray.
  2. Pour the beaten egg on a large dinner plate or flat bottomed bowl.
  3. Mix together the bread crumbs, parmesan cheese and ground pepper together on another dinner plate or bowl.
  4. Roll each asparagus spear in the egg wash, then roll in the bread crumb mixture.  Place on the cookie sheet and repeat with remaining asparagus spears.
  5. Broil for about 2-3 minutes per side or until the spears are golden brown on top and bottom.  Enjoy hot!

    This is such a Maria post “thanks to an overwhelming amount of incompetence” haha! Either way this looks delicious – going to make it for Devin soon! Reminds me of my favorite fried green beans!
