Pumpkin Spice Oatmeal

A delicious breakfast for a cold fall morning. You can substitute pureed sweet potato or butternut squash if you can't find pumpkin! Freeze leftover pumpkin in ice-cube trays for easy use in the future.
  • ⅓ cup rolled oats
  • ⅔ cup skim milk
  • ⅛ tsp salt
  • 1 tsp pumpkin pie spice blend (or a few shakes of cinnamon and nutmeg)
  • 1 tbsp maple syrup/honey/brown sugar
  • ⅓ cup canned 100% pumpkin (make sure it's not pumpkin pie filling)
  • 1 tsp vanilla extract
  • 1 tbsp chopped walnuts - optional
  1. In a small pot over medium heat add milk, oats, salt, spices, maple syrup (or honey/brown sugar) and canned pumpkin. Stir to combine.
  2. Bring oat mixture to a gentle boil. Cover and simmer over low heat for 5-7 minutes. Add more or less time depending on how chewy you like your oatmeal.
  3. Remove pot from heat and add in vanilla extract - stir to combine.
  4. Top oatmeal with chopped walnuts, more milk or any of your favorite oatmeal toppings!
