Herb Roasted Chickpeas

The other day I found the most delicious and healthy snack at the grocery store!  Rosemary and sea salt chickpeas!!  Roasted chickpeas seem to be popping up everywhere as the new health snack – high in protein and fiber, low in fat.  Perfect for snacking.  But this past week was the first time I’ve ever purchased them or tried them.  And they are awesome!  So crunchy and salty!  I really enjoyed them.

Unfortunately for me, my husband ate the whole bag in about 4.5 seconds.  Yes.  The whole bag.  Gone.  I got like 4 chickpeas people.  Actually let me restate this…he ate the whole NINE dollar bag of chickpeas in 4.5 seconds.  Nine dollars.  Gone.  And I only got 4 chickpeas.  Oh well.

Lucky for him I love him to death and I figured out how to make these little crunchy beans at home.  It’s super simple, quick, just as crunchy and delicious and obviously significantly cheaper.  Considering I start with dried beans, this entire batch probably cost me under $1.  A healthy, low-fat snack that’s cheap?  Now we’re talking!

You can make these in large batches it you want.  Seal them up in an airtight plastic bag or plastic container.  They’ll keep for at least 2 weeks, though I highly doubt they’ll stay around that long! chickpeas, roasted chickpeas, healthy snacks, snack recipes, low calorie snacks

Ingredients:

  • 1 can chickpeas, rinsed, drained and thoroughly dried
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp fresh cracked pepper
  • 1 1/2 tsp each dried rosemary and thyme

Instructions:

  1. Preheat your oven to 400 F.
  2. Make sure your chickpeas are completely dry.
  3. Toss chickpeas with olive oil and all the spices.  Each bean needs to be coated with the spices – otherwise they’ll be bland.
  4. Bake for 45-60 minutes – stirring the beans around every 15 minutes.  The chickpeas should be smaller and darker in color and be crispy when they’re done.  Make sure to test about 5 chickpeas before pulling them out from the oven!
