Buffalo Style Cauliflower Bites

Yes!  Buffalo Cauliflower Bites!  They’re AMAZING.  Can you believe it?  A healthy swap out for buffalo wings?  I’m telling you… it’s incredible.  This giant white cruciferous vegetable is turning out to be the most amazing and impressive food.  Really!  There are so many different recipes you can make – mashed potatoes, pizza crust, rice, tater tots, tortillas…..WINGS!  All made out of cauliflower.  Just cauliflower…. buffalo cauliflower, meatless wings, cauliflower recipes, buffalo sauce, vegetarian wings, vegetarian recipes, vegan recipes

buffalo cauliflower, meatless wings, cauliflower recipes, buffalo sauce, vegetarian wings, vegetarian recipes, vegan recipes As you may  know, I’ve whipped up a few healthy swap out recipes featuring my new favorite vegetable.  I’ve done a super yummy Herbed Pizza Crust.  I’m also a big fan of my Blue Cheese & Thyme Cauliflower Mash – so yummy!  But my newest all time, most favorite thing in the world (with cauliflower…) are these Buffalo Style Cauliflower Bites!  They are SO good guys.  So good.  Especially when dunked in my Creamy Feta Sauce!  It provides the needed “cool down” from the wing sauce and adds a nice salty tangy bite!  Yum!!  You’ll be mighty pleased with how they quench even the biggest craving for wings.  And as a former wings fanatic (pre vegetarian days), I’ll attest that these babies are right on target.

Dipped in a thin, flavorful batter and baked in the oven, these cauliflower bites are super low in calories.  But after a big dunk in buffalo wing sauce – I used Franks Hot Sauce – this low calorie treat gets a huge hit of flavor.  It’s delicious!  But…don’t go into thinking that these buffalo bites will taste like a chicken wing.  Because they won’t.  They’re made out of cauliflower, so of course, they taste like cauliflower.  However…cauliflower doesn’t have a strong flavor at all, so it really just tastes like the flavorful batter and Frank’s Hot Sauce.  Which is a good thing.  A tasty thing!  Eat these buffalo cauliflower bites!

  • Make my Creamy Feta Sauce!  Such a fun twist on your traditional blue cheese dip.  Creamy, salty, tangy, full of flavor!  Pairs perfectly with the buffalo bites!
  • Season the batter well!  This will give your buffalo bites a lot of flavor.  A bland batter will make for a bland bite!
  • Be patient and fully bake these bites.  I made these a few times, got impatient (surprise) and tried to quicken up the process.  If you don’t allow that batter to fully cook the bites get a little soft and soggy.  You want the batter completely dry and slightly crispy before dunking in the buffalo sauce.
  • Set appropriate expectations.  Even though I find these to be a great sub for your traditional chicken wing, remember that these are cauliflower.  And…thus will taste like cauliflower, not chicken.  They’re delicious and a great low cal swap, but are not meant to replace a good ‘ol chicken wing!

Buffalo Cauliflower Bites:
Ingredients:

  • 1 head of cauliflower, sliced into medium sized florets
  • 1 cup water
  • 3/4 cup of all purpose flour
  • 1 tsp salt and pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 cup hot sauce (I used Frank’s)

Creamy Feta Sauce:

  • 3/4 cup low-fat Mayo
  • juice of 2 lemons
  • 1 tbsp dijon mustard
  • 6 oz feta, divided

Instructions:

  1. Preheat oven to 450 F.
  2. In large measuring cup or wide mouthed coffee mug, mix together the ingredients from flour to garlic powder.  Batter should be the consistency of a thick crepe batter.
  3. Dip cauliflower florets into the batter allowing the excess batter to drip off.  Lay florets in a single layer on a sheet pan lined with foil or a silpat.
  4. Bake for 20 minutes or until batter is dry and slightly crispy.
  5. Remove cauliflower from oven and careful take each floret and dip into the hot sauce (pour hot sauce into a wide mouthed cup or similar vessel for easy coating).  Allow excess to drip off.
  6. Place the cauliflower florets back onto the sheet train and bake for another 8-10 minutes or until hot sauce has thickened on the outside of the buffalo bites.
  7. While cauliflower cooks, place the mayo, lemon juice, mustard and 4 oz of the feta in the bowl of a food processor.  Process until thoroughly mixed and smooth.  Taste and adjust for seasonings.  Add in the remaining 2 oz of feta before serving.
  8. Serve the cauliflower buffalo bites hot with the creamy feta sauce!
