Crispy Baked French Fries

Oh…My…Word…These french fries!  I can’t even think of a word good enough to describe these!  Delicious?  Amazing?  The BEST FRENCH FRIES EVER???  Yes, I think that last set does the trick!  These garlic parmesan fries are probably one of the best tasting recipes I’ve ever made.  But I can’t decide if this recipe is amazing just based on flavor alone or the fact that they are BAKED fries but taste like REAL fries.   Seriously.  So crispy and full of garlic flavor.  Well…more like a garlic punch.  Lots of garlic!  That’s how I like it.  And it’s ok because my husband ate just as many of these crunchy fries as I did so I’m not too worried offending him with garlic breath!



I just love these french fries.  I really do.  I’m still talking about them and we finished eating dinner 2 hours ago.  Obviously I have a new obsession.  And it happens to be Garlic Parmesan Fries.  But I think that this baked fry recipe would be great with any flavor combo.  Maybe Old Bay fries?  Or cajun spiced fries?  Rosemary and thyme fries?  All would be great – and this recipe is a great easy base to build your own custom fry recipe!  Which is just another reason why this is the BEST FRENCH FRY RECIPE EVER!


garlicfries4 In addition to picking out a delicious flavor combo, you gotta follow a few simple tips to make this recipe go your way.  To get the crispiest, crunchiest, best fries ever, make sure you:

  • Slice the potato into evenly shaped pieces.  This helps ensure even and quick cooking.
  • Place a rack on the lowest rung possible.  Ovens heat from the bottom, so cooking the fries as close to the heating element as possible helps crisp up the outside quickly without over cooking them.
  • Hot, hot, hot heat!  I preheated my oven to 450F which is a great temperature for quick cooking.  Helps prevent an over cooked mushy french fry and gets it nice and crispy.
  • Salt after the fries are done.  Sprinkle on the salt after your fries have finished cooking.  You’ll use less and the salt sticks much better to the hot lightly oiled fries.

Now armed with all these tips, I highly suggest making french fires.  Like now.  Right now.  Garlic parmesan french fries!  You won’t be sorry!

garlicfries6 Crispy Baked Garlic Parmesan Fries:

  • 2 russet potatoes, cut into 1/4″ fries
  • 3 tbsp olive oil
  • 4 cloves of garlic, minced
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp ground black pepper
  • 1/2 tsp salt (optional)


  1. Preheat oven to 450 F.  Place one oven rack in the lowest slot on the bottom (closest to the heat source).
  2. In a small sauce pan, heat olive oil over medium heat.  Add minced garlic and cook for about 1-2 minutes until garlic is fragrant and just slightly golden.  Drain garlic from oil and set aside for later.
  3. Toss potato slices with garlic oil, salt and pepper.  Lay french fries in a single layer.  Bake for 15 minutes.  Remove from oven and flip over and bake for another 15 minutes.  Each side should be golden brown and crispy.  Note:  check fries often to make sure they do not burn.  They may take slightly longer or shorter depending on your oven heat.
  4. Remove fries from oven.  Toss with reserved garlic and parmesan cheese.  Serve hot with ketchup!

    Those look sooooo good, I wish I had a nice hot basket right now. 🙂 Love the addition of parmesan, I can imagine that would add a nice flavor.
