Get On Board With Meatless Meals!

Happy New Year!  It’s officially 2014 everyone!  What are your plans for the upcoming 365 days?  Did you make any goals or resolutions?  Things you’re looking forward to?  I know Dario and I are looking forward to saving up for a house, sticking to our healthy lifestyle plan and even more exciting for me, my new job!  Yup!  More on that in a future post…we have food to get to!
This year, more than ever before, I’ve noticed people interested in cooking one or more meatless meals a week.  It’s exciting to see.  People focusing in on produce, legumes and whole grains – all of which can definitely make your meals a touch healthier.  So to help all those interested in a meatless meal or two, I’ve compiled a list of my top favorite meat-free dishes from my Recipe Archives!
