Remember when I told you I got a new job???  Well I did!  And I’m working as a dietitian for a grocery store chain – Mrs. Green’s!  It’s a NY based store and they are now opening their first store in VA (or anywhere in the “south”).  I’ll be the in-store dietitian but also providing the nutritional branding for the store!  I’m so excited!  The store is phenomenal – a food-lovers dream!  So many cool products.  I’m very excited to be working there.  And even more excited to start shopping there! kale chips, kale recipes, healthy recipes, healthy cooking, vegetarian recipes, vegan recipes, vegetarian kale chips, kale recipes, healthy recipes, healthy cooking, vegetarian recipes, vegan recipes, vegetarian One of the things I’ll be doing there is teaching a weekly cooking class!  I’m SO excited for this.  I can’t even tell you!!  I got to sit down with their corporate chefs, review recipe ideas and class themes.  It was a ton of fun.  One of the first classes I’ll be teaching will be all about kale.  Because kale is delicious and awesome of course.  And one of the recipes I’ll be featuring are my cheesy kale chips.  One of the best kale recipes of all time! kale chips, kale recipes, healthy recipes, healthy cooking, vegetarian recipes, vegan recipes, vegetarian

kale chips, kale recipes, healthy recipes, healthy cooking, vegetarian recipes, vegan recipes, vegetarian They’re so crunchy and tasty and over the top healthy and good for you.  I mean…they’re kale.  It’s just kale.  Sometimes I can’t even believe how good these kale chips are.  The first time I made these, Dario and I devoured the whole tray as it cooled on top of the oven.  And the whole time were munching down on these crispy bits of kale, we kept saying “I can’t believe these are so awesome.  And it’s kale!”  Yes, it’s crazy, but true.  A healthy, totally 100% good for you chip.  That tastes AMAZING.  Make these…now!  You won’t be sorry! kale chips, kale recipes, healthy recipes, healthy cooking, vegetarian recipes, vegan recipes, vegetarian Cheesy Kale Chips: Ingredients:

  1. 1 large bunch of Tuscan/Lacinato kale, washed and thoroughly dried
  2. 1/2 tsp salt and pepper
  3. 1/4 cup grated parmesan cheese OR nutritional yeast (for a vegan version)
  4. 1/4 fresh ground nutmeg
  5. 1 tbsp olive oil

Instructions:

  1. Preheat oven to 400 F.
  2. De-stem kale and tear into 3″x3″ square – about the size of a tortilla chip
  3. Toss kale pieces with olive and spices until each leaf is thoroughly coated.
  4. Lay out on a sheet pan – make sure to not over lap any of the kale to ensure even cooking and crispiness.
  5. Sprinkle all the kale with the parmesan cheese.
  6. Bake kale for about 8-10 minutes – but watch them closely, they burn easily.  Chips are done when the kale is completely dried and crispy to the touch.  Serve immediately or place in a sealed container for up to 1 week.
