Italian Arugula & Grain Salad

So, I totally had two giant servings of this salad last night.  Yup…two over flowing bowls.  And I enjoyed ever last bite!  Luckily this is mostly veggies, some whole grains and just a few crumbles of goat cheese (ok a large few crumbles of goat cheese).  Not a total blow out to my day.  Thankfully!

I came home a touch stressed (hence the two bowls instead of one).  Our mail was held during our 2 week vacation.  And neither our building, the post office or the postman know where it is or how to get it.  Granted most if it is ads, bed bath and beyond coupons, credit card offers…but I still want my mail.  How can NO ONE know where it is…come on people!!  I need my mail!

Eventually, we’ll get our mail.  At least that’s what I keep telling myself.  But until then, I’ll continue to eat this delicious Italian Arugula & Grain Salad.  You just can’t beat it!  For starters it took all of 10 minutes to prepare.  I used pre cooked kamut (an ancient grain – see here how to cook it) that I frozen for busy days.  Secondly, it has so many different flavors and textures – crunchy raw vegetables, chewy kamut grains, creamy goat cheese, peppery arugula!  I love salads like this – keeps me guessing as I eat it!

Whip up this salad on a busy weeknight!  Customize it with your favorite grains, greens and vegetables that you have on hand!  This recipes makes about 4 servings so there will be plenty of leftovers for lunch the next day!  Enjoy!

Italian Arugula & Grain Salad:
Ingredients:

  • 1 cup cooked kamut or other whole grains like barley, quinoa, brown rice or wheat berries
  • 16 oz arugula
  • 1 pepper, diced
  • 1/2 small onion, diced
  • 3 oz tofu, diced
  • 1 tomato, seeded and diced
  • 1/3 cup fresh basil, roughly chopped
  • 1/4 cup capers
  • 1/2 cup crumbled goat cheese (more if you’d like!)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • juice from 1 lemon
  • 1/2 tsp salt and pepper

Instructions:

  1. Combine all ingredients except olive oil, vinegar and lemon juice in a large bowl.
  2. Whisk together the olive oil, vinegar and lemon juice.  Pour over grain salad slowly – tasting as you go for flavor.  Add salt and pepper and toss to combine.  Serve immediately.  Keeps well for leftovers the next day!
