People, I’m depressed!  Christmas is over…  I’m so sad!  I get really excited and look forward to Christmas so much each year – it’s my all time favorite holiday.  I just can’t believe it’s done!!  It never fails…it feels like it’s all over in a split second.  All the presents (of which I got some awesome ones), delicious homemade favorite food, Christmas songs and of course all the cookies and eggnog.  Done and done. avocado salad, avocado recipes, vegetarian recipes, avocado, vegetarian, vegan recipes

While mentally I’m slightly depressed the holidays are gone for 2013, my body is more than ready to move onto new and better things.  Like food that is not laced with tons of sugar, chocolate and icing.  My system is more than ready for some healthful choices.  Maybe a vegetable?  Or a piece of fruit that is not also considered dessert!  Yes, I dare say I need some of that.

avocado salad, avocado recipes, vegetarian recipes, avocado, vegetarian, vegan recipes My husband suggested we go on a raw foods diet for 21 days in addition to getting back to our regular eating plan.  As much as that sounds super healthy and great, I like cooked food.  I’m down for more veggies, they just got to be mostly cooked ones.  I also enjoy warm meals, especially when the temperatures are only in the 30’s.  No raw diet for me.

But to compromise, I did decide to make a bunch of EXTRA healthy meals for our lunches and dinners.  That way, we’re both happy, we’re eating healthy again and each meal is chock full of delicious nutrient packed produce.  Sometimes throughout the continuous barrage of  rich foods of the holidays, I do forget how good a simple, fresh salad can be. This Lemon & Cilantro Avocado salad really hit the spot.  Its fresh, light and full of flavor.

avocado salad, avocado recipes, vegetarian recipes, avocado, vegetarian, vegan recipes I served it up in some butter lettuce cups taco style – ya know, to go with the whole increased veggie thing.  It was phenomenal!  And if you store it in an airtight container (with a little extra sprinkle of lemon juice on top), it keeps well and makes the perfect leftover lunch!

Lemon & Cilantro Avocado Lettuce Cups:
Ingredients:

  • 1 15.5 oz can chickpeas, rinsed and drained
  • 2 avocados, cut into 1″ cubes
  • 1/4 cup red onion, diced
  • 1/2 cup roasted red pepper, diced
  • 2 tbsp cilantro, finely chopped
  • juice from 1 large lemon
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp salt and pepper
  • 1/4 tsp each cumin and coriander
  • 6-8 cup-shaped lettuce leaves – such as butter lettuce or romaine

Instructions:

  1. In a large bowl whisk together the lemon juice, olive oil, salt, pepper, cumin and coriander.
  2. Add in the remaining ingredients except for the lettuce leaves.  Gently toss to coat, making sure to not smash the avocado too much.
  3. Spoon about 1/4 cup of the avocado salad into each lettuce cup (you may have some avocado mixture leftover).  Roll lettuce leaf around the filling and eat like a taco!
