Fennel & Orange Salad With Lemony Lentils

Now that it’s officially Spring, I’ve been craving fresh tasting meals.  Ones that involve little to no cooking – no more casseroles, stews and soups.  Plates filled with crunchy veggies.  Anything bright and fresh, I want it.  Warmer weather stuff, ya know?  Unfortunately I want all the foods that have yet to make an appearance at my local farmer’s markets.  All of that produce still screams winter.  There’s kale, butternut squash, potatoes, onions, more kale, spinach, beets, sweet potatoes…kale…kale and kale!  I don’t want to eat anymore kale.  Or potatoes.  Or onions.  Geesh, I’m kale-ed out people.  I’m winter squashed out! fennelorangesalad1-001

I’m just wintered out in general.  So the last few weeks I’ve been getting a few more things at my local grocery store instead of the markets.  I feel bad.  Sorta.  I always like supporting our local farmers.  But I can’t eat anymore of this winter time produce.  I just can’t do it.  So instead, I’ve been stocking up on some early asparagus, zucchini, broccolini and a few giant heads of fennel!   I absolutely love fennel!  So crunchy and fresh when its raw.  The perfect thing for my recent “fresh food” cravings!

Raw fennel is great just by itself – especially as a snack.  But, I already knew I was going to be whipping up a big salad.  I mean, salad really is the epitome of fresh, Spring-time food.  To spice it up, I added in some super sweet Cara Cara oranges, spicy red onion and creamy avocado.  I had this combo once at a restaurant near me (now closed sadly) and it was absolutely phenomenal.  All the different textures and flavors give you such a fresh burst of deliciousness in your mouth!  A much needed wake up call for my tastebuds!

If you’re feeling like you need a hit of Spring time in your life, I highly suggest making this salad.  In large quantities… It’s so easy and quick!      Very little clean up.  And since there’s no lettuce, it serves great for a leftover lunch the next day (I’m having this leftover today!).  And of course delicious!  I hope you enjoy!

Fennel & Orange Salad With Lemony Lentils:
Ingredients:

  • 2 large fennel bulbs
  • 1/4 large red onion
  • 4 medium oranges (I used Cara Cara oranges), segmented, juice reserved
  • 1 avocado, sliced
  • 1 cup lentils, cooked
  • 1/4 parsley, chopped
  • juice of 1 lemon, divided
  • 1 tsp salt and freshly ground pepper
  • 1/3 cup good quality extra virgin olive oil
  • 1 tsp Dijon Mustard
  • 1 tbsp red wine vinegar

Instructions:

  1. Using a mandolin or a very sharp knife, slice the fennel and red onion into very thin slices.
  2. In a small bowl, whisk together the reserved orange juice (from segmenting the oranges – squeeze the juice from the leftover orange membranes), olive oil, dijon mustard, red wine vinegar and half of the lemon juice.  Taste and adjust for seasonings.
  3. Toss together the fennel slices, onion slices, oranges and salt and pepper in a large bowl.  Pour over the dressing – it makes a lot, so don’t pour all of it on at once – and gently toss to coat all the vegetables.
  4. In another small bowl, mix together the cooked lentils, chopped parsley and remaining lemon juice.
  5. To serve, plate the  fennel salad mixture.  Top with the lentils and lastly a few slices of the avocado.  Enjoy!
