Roasted Winter Vegetable Quinoa Bowl

Dario and I have been on a roasted vegetable kick lately.  It’s actually more like an obsession.  A roasted veggie obsession.  That’s definitely more accurate.  We have them at least 3 times a week.  Yes…3 times.  Sometimes just roasted brussels sprouts.  Maybe a big batch of roasted cauliflower.  But many times, it’s a giant hodge podge of anything or everything I have in the fridge.  Just like that photo up above! roasted vegetables, quinoa, quinoa bowl, meatless monday, vegetarian recipes, vegetarian, healthy recipes

Our all time favorite way to eat copious amounts of roasted glory is in the form of my newly invented Quinoa Bowls.  Basically…a bowl of quinoa with veggies on top.  That may not sound all that exciting, but it so is!  Quinoa is my blank slate for any type of flavor profile.  And veggies can adapt to whatever spices or seasonings I happen to be in the mood for.  It’s the perfect combination – great for dinner and even more exciting as leftovers for lunch the next day.

roasted vegetables, quinoa, quinoa bowl, meatless monday, vegetarian recipes, vegetarian, healthy recipes For this particular spin on my Quinoa bowl, I used a ton of vegetables I picked up from the farmer’s market – brussels sprouts, tri-colored carrots, onions, golden beets and some leftover fennel that was stashed in the fridge.  A quick toss in some olive oil and a simple mix of salt and pepper.  Really, really basic.  But reeeeeally delicious.  When veggies roast in the oven, they don’t need all that much help in the flavor department – especially when there’s a good mix of several kinds.  Sweet, intensely earthy flavors make simple winter vegetables a master piece.

Roasted Winter Vegetable Quinoa Bowl:
Ingredients:

  • 5 large carrots, sliced into 2″ pieces
  • 1 large onion, sliced into 1/2″ pieces
  • 7-10 medium golden beets, scrubbed clear and quartered
  • 1 lb brussels sprouts, halved
  • 1 fennel bulb, sliced into 1/2″ pieces
  • 3 tbsp extra virgin olive oil
  • 1 tsp salt and freshly ground pepper
  • 2 cups cooked quinoa (follow package directions)
  • 1 15.5 oz can white beans, rinsed and drained

Instructions:

  1. Preheat oven to 425F.
  2. Place all the cut vegetables onto a large sheet tray.  Toss with olive oil, salt and pepper until everything is evenly coated with the oil and seasoning.
  3. Roast in the oven for about 30 minutes or until vegetables are golden and tender.
  4. While vegetables roast, mix together the quinoa and white beans.  Taste and season with salt and pepper if needed.
  5. Serve about 3/4 cup of the quinoa mixture into a bowl and top with a generous 1 cup of the roasted vegetables.  Serve immediately.

    I love quinoa! This looks amazing, thank you. I swear, roasted vegetables are like magic. You put in these normal old veggies that have been lying around unassuming in your fridge and you take out DINNER MAGIC. 🙂
