Peach & Blackberry Cobbler

Simple desserts during the summer is where it’s at!  This “throw it in the oven and it magically becomes delicious cobbler”, fits my simple dessert criteria!  Mix, stick in a pan, bake, eat, awesome.  Oh, how I wish I still had some leftover right about now!  All warm and fruity, topped with melty, creamy vanilla ice cream….hungry yet?  Yes, I thought so…Me too!

peach and blackberry cobbler, cobbler, peach cobbler, berry cobbler, healthy desserts, summer desserts, healthy cobbler, fruit desserts, vegetarian desserts I made this cobbler a few weekends ago when my in-laws came over for dinner.  Like I said, it’s easy, plus it’s perfect to stick it in the oven while you’re eating dinner.  By the time everyone’s ready for dessert, it comes out of the oven ready to go.  I served this with, of course, vanilla ice cream.  The best part of eating this dessert was listening to my father in-law exclaim “I’ve never had a hot and cold dessert!  This is so good!  It’s genius!”  Hahaha – yes…warm ooegy gooey dessert with slowly melting ice cream.  I dare say that is genius.

peach and blackberry cobbler, cobbler, peach cobbler, berry cobbler, healthy desserts, summer desserts, healthy cobbler, fruit desserts, vegetarian desserts I hope you make this “genius” dessert!  It’s not only one of the best desserts out there, but it’s also totally customizable – whatever fruit you like, the type of spices, or level of sweetness.  Just play around with your favorite flavors and you’re bound to come out with an extremely tasty treat.  I also highly recommend you serve this with a big scoop of vanilla ice cream!

Peach & Blackberry Cobbler:

Ingredients:

  • Filling:
    • 4 peaches, sliced into “in wedges
    • 1 pint blackberries
    • 1 tbsp cinnamon
    • 1/4 tsp salt
    • 1 tbsp lemon zest
    • 1-2 tbsp sugar – depending on how sweet your fruit is
    • 2 tbsp corn starch
  • Crumble Topping:
    • 8 tbsp salted butter
    • 1/4 tsp freshly ground nutmeg
    • 1/2 cup hazelnuts, roasted and roughly chopped
    • 2 tsp cinnamon
    • 3/4 cup rolled oats
    • 1/3 cup brown sugar
    • 1/2 cup flour

Instructions:

  1. Preheat oven to 375F.
  2. Together the sliced peaches, cinnamon, salt, lemon zest, sugar and corn starch.  Fold gently until spices and corn starch thoroughly coat all the fruit.  
  3. Gently fold in blackberries making sure not to smash them.
  4. Pour filling mixture into a 8″ oval or square baking dish and set aside.
  5. In the bowl of a food processor add in all topping ingredients except the chopped nuts.  Pulse until everything is combined and is sticky when squished together.  There should still be some larger pieces of butter and oats.  Manually mix in the hazelnuts – you want to keep some large pieces of nuts.
  6. Sprinkle the topping over the fruit mixture.
  7. Bake at 375 for 30-40 minutes or until top is golden brown and filling is hot and bubbly.  Serve warm with whipped cream or vanilla ice cream.

    I love a good cobbler, and this puts two of my favorite things – peaches & blackberries – together! Love to find great, seasonal recipes!! (P.S. Support your local Farmer’s Market.)

      Yes-all that fruit was from my local farmer’s market! My one and only place for fresh produce!!!

    I’m always looking for a great cobbler recipe. Peaches are full force right now, too! I’m glad I found this at just the right timing!

      Yes peaches are all over the place! Super sweet and ripe – this is such a good recipe to use them up!!! I hope you try it!!
