  • 1 small napa cabbage or ½ large
  • 2 cups (or 2 large handfuls) bean sprouts
  • 3 large green onions, sliced thinly
  • 1 medium cucumber, sliced into thin half moon slices
  • ½ cup roasted peanuts, roughly chopped
  • 1 pack Ramen noodles, crushed
  • ⅓ cup cilantro, chopped
  • ¼ cup toasted sesame seeds
  • ¼ cup canola oil
  • 1 tbsp honey
  • 3 tbsp rice wine vinegar
  • 2 tbsp sesame oil
  • 2 tbsp tamari or soy sauce
  • 1 tsp pepper
  1. Mix together all the dressing ingredients - from sesame seeds to pepper in a small bowl. Taste and adjust for seasoning.
  2. In a large mixing bowl, toss together the remaining ingredients except the crushed Ramen noodles. Pour on dressing and toss to combine. Gently stir in the Ramen noodles immediately before serving (in order to preserve their crunchiness). Enjoy!
