  • 2, 5 oz cans light tuna canned in water, drained
  • 3 " slice of an English cucumber, chopped into ¼" pieces
  • 2 scallions, chopped
  • ¼ of a large red pepper, diced
  • 1 tbsp sesame seeds
  • 1 tsp ginger, minced
  • 1 clove garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil
  • ½ tsp pepper
  • 1 tsp rice vinegar
  • 2 tbsp light mayo
  • ¼ cup chopped cliantro
  • Optional: 1 tsp siracha hot sauce and ½ cup bean sprouts for toppings
  • 3-4 whole wheat wraps or 3-4 iceberg lettuce leaves for lettuce wraps
  1. In a small bowl mix together the dressing ingredients - ginger, garlic, soy sauce, sesame oil, pepper, rice vinegar, mayo, cilantro and siracha hot sauce if using. Whisk together to ensure all the ingredients are combined. Allow to sit for about 30 minutes to allow flavors to merry.
  2. While the dressing sits, mix together the tuna, cucumber, scallion, red pepper and sesame seeds in a medium mixing bowl.
  3. Drizzle dressing over the tuna salad mixture - use enough until you reach desired consistency. Spoon tuna salad into whole wheat wraps or for a lighter take, use iceberg lettuce leaves for a crunchy and refreshing lettuce wrap! Top with bean sprouts and extra siracha if desired.
