  • 1 avocado, roughly chopped
  • ½ light sour cream
  • ½ tsp salt and black pepper
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ¼-1/3 cup low-fat buttermilk
  1. Place all ingredients except buttermilk into a bowl of a food processor. Pulse until everything is completely combined and mostly smooth.
  2. Add in ¼ cup buttermilk and process again. Aim for a consistency of pancake batter. If you need to add in the remaining buttermilk, do so now.
  3. Continue to pulse the mixture in the food processor until all ingredients are combined, the mixture is smooth and reached desired consistency.
  4. Taste and adjust for seasonings. Serve immediately. Can be kept in the refrigerator for up to 3 days.
