  • 1 100% whole wheat pita, sliced in half and carefully opened
  • 1 cup arugula
  • ½ avocado, sliced thinly
  • ¼ cup thinly sliced cucumbers
  • ¼ roasted red peppers sliced into strips and patted until dry
  • ¼ cup Lemon Basil Hummus
  • 2 tbsp goat cheese
  • Salt and pepper to taste
  1. Divide the hummus equally between the two pita halves. Gently open the pita halves and spread the hummus over one side.
  2. Carefully fill the pitas with the arugula, avocado, cucumbers and red peppers. Crumble 1 tbsp of goat cheese per pita half.
  3. Add salt and pepper to taste and serve immediately.
