Ingredients
- 4 cups mixed greens
- ½ cup steamed beets
- ½ cup cooked barley
- ½ cup diced avocado
- ½ cup white beans
- ½ cup diced cooked tempeh or chicken, tuna or other protein
- ¼ cup diced cheddar cheese
- Creamy Herb Dressing
Instructions
- Toss salad greens with dressing (amount is your choice). Divide evenly between two plates.
- Gather all the salad toppings. Top each plate with an equal amount of all the toppings. To make your salad look like a traditional cobb salad, place each topping into rows on top of the salad.
- Serve immediately.
