A revamped and creative twist on the classic cobb salad!

  • 4 cups mixed greens
  • ½ cup steamed beets
  • ½ cup cooked barley
  • ½ cup diced avocado
  • ½ cup white beans
  • ½ cup diced cooked tempeh or chicken, tuna or other protein
  • ¼ cup diced cheddar cheese
  • Creamy Herb Dressing
  1. Toss salad greens with dressing (amount is your choice). Divide evenly between two plates.
  2. Gather all the salad toppings. Top each plate with an equal amount of all the toppings. To make your salad look like a traditional cobb salad, place each topping into rows on top of the salad.
  3. Serve immediately.
