  • ½ head of romaine lettuce, sliced thin
  • ¼ large red onion, thinly sliced
  • 1 small bag of whole wheat pita chips, lightly crushed
  • 1 cup cucumbers, thinly sliced
  • 1 bell pepper, chopped
  • ½ cup flat leaf parsley, finely chopped
  • ¼ cup fresh mint, finely chopped
  • 3 tbsp ground sumac
  • 1 tsp ground black pepper
  • 1 tsp salt
  • Juice from 1 lemon
  • 1 tbsp red wine vinegar
  • 3 tbsp extra virgin olive oil
  1. Mix all ingredients together in a large bowl. Taste for seasoning and adjust as needed. Allow salad to sit for about 10 minutes before serving to allow the pita chips to absorb some of the dressing. Serve at room temperature.
