  • 4, 4 oz salmon filets
  • ¾ cup of finely chopped mixed herbs (basil, parsley, chives, oregano, etc)
  • ⅓ cup low-fat, olive oil based mayonnaise
  • 2 tbsp dijon mustard
  • 1 tbsp lemon zest (from about 1 lemon)
  • 1 tbsp lemon juice
  • ½ tsp salt
  • ½ tsp freshly ground pepper
  • 2 tbsp olive oil
  1. Preheat broiler to high and place oven rack in the middle slot of your oven.
  2. In a mortar and pestle grind up with herbs, salt and pepper.
  3. In a small bowl combine the ground up herbs, mayo, mustard, lemon juice and zest. Stir to combine.
  4. Evenly distribute the mayonnaise mixture over each of the 4 salmon filets. Cover the top and all sides of the filets.
  5. In a large sauce pan, add olive and heat over medium heat. Add the filets and cook for about 5 minutes.
  6. Turn off stove, and put entire saute pan into the oven and broil salmon for another 5 minutes or until desired doneness. Be sure to watch the salmon carefully as the top can burn quickly from the broiler.
