  • 1 can chickpeas, rinsed, drained and thoroughly dried
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp fresh cracked pepper
  • 1½ tsp each dried rosemary and thyme
  1. Preheat your oven to 400 F.
  2. Make sure your chickpeas are completely dry.
  3. Toss chickpeas with olive oil and all the spices. Each bean needs to be coated with the spices - otherwise they'll be bland.
  4. Bake for 45-60 minutes - stirring the beans around every 15 minutes. The chickpeas should be smaller and darker in color and be crispy when they're done. Make sure to test about 5 chickpeas before pulling them out from the oven!
