  • 1 cup cooked kamut or other whole grains like barley, quinoa, brown rice or wheat berries
  • 16 oz arugula
  • 1 pepper, diced
  • ½ small onion, diced
  • 3 oz tofu, diced
  • 1 tomato, seeded and diced
  • ⅓ cup fresh basil, roughly chopped
  • ¼ cup capers
  • ½ cup crumbled goat cheese (more if you'd like!)
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • juice from 1 lemon
  • ½ tsp salt and pepper
  1. Combine all ingredients except olive oil, vinegar and lemon juice in a large bowl.
  2. Whisk together the olive oil, vinegar and lemon juice. Pour over grain salad slowly - tasting as you go for flavor. Add salt and pepper and toss to combine. Serve immediately. Keeps well for leftovers the next day!
