Ingredients
- 1 lb pasta
- 1 lemon - juice and zest
- 1 tsp salt and pepper
- 1 - ½ cups fresh ricotta cheese
- 1 cup reserved pasta water (reserve after pasta has cooked in the water)
- ½ cup fresh grated parmesan cheese
Instructions
- Bring a large pot of water to a boil.
- Cook pasta according to package directions. Make sure to reserve about 1 cup of pasta water before draining.
- In a medium pot add ricotta, about ⅓ cup of reserved pasta water, lemon zest, salt and pepper and heat over medium low heat. Stir to combine and begin thinning out ricotta.
- Continue adding pasta water until the ricotta thins until a alfredo sauce like consistency. You may not need to use all of the pasta water. Add parmesan cheese and taste for seasoning.
- Pour ricotta sauce over drained pasta. Stir to combine. Add in the lemon juice to the ricotta pasta mixture and stir gently to combine.
- Serve immediately.
