Heat 6 cups of the water and add into a large pitcher. Add tea bags and brew for 1-2 hours.
While tea brews, add the remaining 4 cups of water, lemon zest, salt, honey and mint into a medium sauce pot. Bring to boil. Boil for about 10 minutes covered. Turn heat off, remove lid and allow mint mixture to steep for 30 mins.
Once mint mixture is cooled to room temperature, add to brewed tea along with the lemon juice. Stir to combine. Taste and adjust for sweetness.
