  • 5 apples sliced thinly - a mix of granny smith and honey crisp
  • ¼ cup of apple cider
  • ¼ cup corn starch
  • 1 tsp salt, divided in half
  • 2 tbsp lemon juice
  • 2 tbsp pumpkin pie spice
  • 1 cup oats
  • 1 stick unsalted butter
  • 1 cup flour
  • 1 tbsp cinnamon
  • 1 cup walnuts, roughly chopped
  • ¾ c brown sugar
  1. Preheat oven to 375 F.
  2. In a large bowl mix together the apple slices, apple cider, corn starch, ½ tsp salt, lemon juice and pumpkin pie spice. Stir apple mixture until all ingredients are thoroughly combined and apple slices are coated well in the spice and corn starch.
  3. Pour apple mixture into a large baking dish.
  4. In the bowl of a food processor add the oats, butter, flour, remaining salt, cinnamon and brown sugar. Pulse a few times until the butter is broken down into the size of peas.
  5. Stir in the chopped walnuts by hand.
  6. Top the apples with the crumb mixture. You can press some of the crumb mixture in your hands to create a more solid topping. You will most likely have extra crumbs - these freeze well and can be used later for other desserts.
  7. Cover apple crisp with aluminum foil and bake for 40 mins. Remove foil and continue to bake another 10-15 minutes or until top is golden brown.
  8. Serve warm with ice cream or whipped cream.
