Vary the amount of oil or vinegar depending on your desired tartness.

  • 1 head roasted garlic, cloves removed
  • 2 tbsp fresh lemon juice
  • 1 tbsp white wine vinegar
  • 1 tsp dijon mustard
  • ½ cup good quality extra virgin olive oil
  • ½ tsp each salt and pepper
  1. Add all ingredients to blender or food processor.
  2. Blend on high until all ingredients are fully pureed and combined - about 1 minute.
  3. Taste dressing and adjust for seasonings.
  4. Note: dressing can be made in a jar or bowl, however you will need to make a paste with the roasted garlic.
  5. Dressing will keep in the refrigerator for up to 2 weeks.
