A tasty and filling triple decker sandwich!

Basil Cashew Cream Sauce:
  • 1½ cups cashews, soaked over night and drained of soaking water
  • 1 cup packed fresh basil leaves
  • ½ tsp salt and pepper
  • 1 small clove of garlic
  • 3 tbsp nutritional yeast - optional
  • ½-1 cup hot water
Sandwich Ingredients:
  • 3 slices Paleo Bread (from a Tasty Love Story)
  • 2 slices tomato
  • ¼ fresh spinach leaves
  • ¼ roasted red pepper slices
  • ¼ thinly sliced red onion
  • ¼ small avocado, sliced thin
  • salt and pepper to taste
  1. Add all the ingredients of the cashew cream except the water to a high powered blender or food processor. Begin blending and slowly drizzle in the hot water. Stop to scrape down the sides of the bowl every few seconds and check for consistency. Aim for a pancake batter like consistency. Refrigerate until ready to use.
  2. To assemble the sandwich, lay out all 3 layers of bread and top with a little bit of the cashew cream.
  3. On the first slice, add a layer of spinach followed by tomatoes and red onion. Add on another slice of cashew cream smeared bread.
  4. Continue with a layer of avocado followed by a few red pepper slices. Top with the remaining slice of bread (cashew cream side down). You may need a tooth pick to hold it all together!
