Spiced Apple & Pear Baked Oatmeal

For the longest time I’ve been craving a really good bowl of apple cinnamon oatmeal.  Ya know…the kind that comes in the little packet?  Yea, the not even real apple pieces, super processed, lots of sugary oatmeal goodness!  That’s the kind I want people.  Can’t help it.  It’s what I want!

baked oatmeal, oatmeal, apple oatmeal, pear oatmeal, breakfast recipes, vegetarian recipes Well actually I can help it.  Technically, I can make my own apple cinnamon oatmeal.  That has real apple pieces, is not super processed, and uses all-natural sources of sugar.  That sounds better, don’t ya think?  The only problem is, I’m not going to whip up a fresh bowl of oats every morning. I just don’t have the time.  And although I love to cook, getting up extra early to cook a somewhat involved breakfast is just not going to happen.

baked oatmeal, oatmeal, apple oatmeal, pear oatmeal, breakfast recipes, vegetarian recipes Instead, I decided to make a baked oatmeal recipe.  A whole entire tray of apple flavored oatmeal or to be more specific, an entire Spiced Apple & Pear Oatmeal.  Prepped, cooked and ready to eat whenever my morning hunger hits.

baked oatmeal, oatmeal, apple oatmeal, pear oatmeal, breakfast recipes, vegetarian recipes I love all the apple and pear pieces scattered throughout this.  It’s really filled with fruit!  In also threw in a big handful of dried cranberries – they’re so pretty sprinkled amongst the other fruit and bring a great tart flavor to the whole thing.  Yum!  Got to be one of my all time favorite Fall-inspired breakfasts.  And considering I’ve eaten it every morning for the last few days, I’d say I’m obsessed!

Ingredients:

  • 3 cups rolled oats (not instant)
  • 2 tbsp brown sugar
  • 1 tbsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup craisins
  • 2 eggs + 1 egg yolk
  • 1 tsp vanilla extract
  • 2 tbsp canola oil
  • 1 1/2 cups milk
  • 1/2 cup apple cider
  • 1 cup diced honey crisp apple
  • 1 cup diced bosc pears

Instructions:

  1. Preheat oven to 350 F.  Spray an 8 x 8″ baking dish with non-stick cooking spray.
  2. In a medium mixing bowl, whisk together the wet ingredients:  eggs, yolk, vanilla extract, canola oil, milk and apple cider.
  3. In a separate larger mixing bowl, toss together the dry ingredients:  rolled oats, brown sugar, cinnamon, nutmeg, salt and baking powder.  Slowly drizzle in the wet ingredients, folding as you go.  Mixture should be quite soupy.
  4. Lastly, fold in the craisins, apples and pears.  Pour oatmeal mixture into greased baking dish.  Cover with aluminum foil and bake covered for 30 minutes.
  5. After 30 mins, remove tin foil and bake for another 20 minutes or until oatmeal is just set.  Serve hot with maple syrup, honey, chopped nuts or any other favorite toppings!
