Stuffed California Pitas

Recently, I’ve been on a pita stuffing kick.  Lunch, dinner…snack.  I want a pita and I want to stuff it full of yummy ingredients!  Ok, it’s really more like a stuffed pita obsession.  But I can’t help it.  It’s one of those meals I not only love because its delicious (obviously), but because it’s really good for you!  Healthy recipes that I actually crave make me a really happy girl!

My favorite stuffed pita thus far have been with avocado, roasted red peppers, cucumbers, arugula and goat cheese!  Pretty much my all time favorite combination of flavors.  However, plain vegetables stuffed in a pita would be somewhat uninteresting.  So to bump up the flavor, I’ve been adding a large shmear of hummus.  It not only adds a good flavor punch but also a nice hit of protein too.  For the latest batch of stuffed pitas, I’ve been using my basil and lemon hummus.  Its awesome on this sandwich!  You can get the recipe here.  The bright lemon flavor and floral basil make this sandwich pretty close to phenomenal.

And now with more Spring produce out, the filling options have been expanded to include roasted asparagus – well really that’s only in Dario’s pita – radishes, roasted mushrooms, artichokes and sweet spring onions.  Mmmmmm…is it lunch time yet?  I want a stuffed pita!

California Stuffed Pita:
Note:  fill pitas with whatever vegetables or ingredients you love the most.  These are totally customizable to your tastes.  I’ve listed my favorites below:
Ingredients:

  • 1 100% whole wheat pita, sliced in half and carefully opened
  • 1 cup arugula
  • 1/2 avocado, sliced thinly
  • 1/4 cup thinly sliced cucumbers
  • 1/4 roasted red peppers sliced into strips and patted until dry
  • 1/4 cup Lemon Basil Hummus
  • 2 tbsp goat cheese
  • Salt and pepper to taste

Instructions:

  1. Divide the hummus equally between the two pita halves.  Gently open the pita halves and spread the hummus over one side.
  2. Carefully fill the pitas with the arugula, avocado, cucumbers and red peppers.  Crumble 1 tbsp of goat cheese per pita half.
  3. Add salt and pepper to taste and serve immediately.
