Sweet Apple, Blue Cheese & Fig Sandwiches

The other night we went out to dinner at this cute little restaurant – and it was the perfect evening!  A cool Fall evening, we ate outside, enjoying our meal and doing a little people watching.  It was the perfect evening to unwind from a long and busy work week.  Good company, good food, can’t ask for a more enjoyable Friday night in my book!

apple and cheese sandwich, blue cheese, fig spread, apple recipes, sandwich recipes, vegetarian sandwiches Dario ordered a really delicious salad and I ended up ordering probably one of the most delicious sandwiches I’ve ever eaten!  Slathered between two pieces of pumpernickel bread was creamy blue cheese, a sweet fig jam and a ton of thinly sliced apples.  Crunchy, sweet, tangy and a touch of tartness.  YUM!  Every flavor possible going off in my mouth in each bite!

apple and cheese sandwich, blue cheese, fig spread, apple recipes, sandwich recipes, vegetarian sandwiches The second I sunk my teeth in to that thick slice of pumpernickel bread, I knew I wanted to re-create this sandwich at home.  An immediate must have for our regular week night menu repertoire.  And believe it or not, I re-created it within the week!  Which rarely happens!  Most of the time, ideas to spin off a unique restaurant dish go into my “future posts” notebook.  Some take a while, but eventually make it on here.  But this sandwich?  Record time.  That’s how good it was!

I loved, loved, loved this sandwich.  Everything about was delicious.  The bread, crunchy apples, blue cheese….fig jam?!  Really good.  Just really good!  Best of all, I feel like there’s a bit of Fall in every bite!   And its perfect for an easy weeknight meal – no cooking required!  You’ll have dinner on the table in mere few minutes.  Pack up leftovers for lunch the next day!

Sweet Apple, Blue Cheese & Fig Sandwich:
Ingredients:

  • 4 oz Marscapone cheese, at room temperature
  • 4 oz Blue cheese, at room temperature
  • 1 Honey crisp apple, thinly sliced
  • 1/2 Fig spread
  • 8 slices dark rye bread

Instructions:

  1. Mix together the softened marscapone and blue cheese forming a thick spread.
  2. Lay out for slices of the rye bread.  Spread the blue cheese mixture evenly onto each slice of bread.  Top each slice with 1/4 of the apple slices.
  3. On the remaining 4 slices of spread, evenly distribute the fig jam.  Lay on top of each of the apple topped slices pressing gently to secure all the apples in place.  Serve immediately!  apple and cheese sandwich, blue cheese, fig spread, apple recipes, sandwich recipes, vegetarian sandwiches

    I’ve been thinking about making an apple sandwich. I made a delish one with pears not long ago. You’ve officially inspired me!
